Spicy Beetroot Curry Salad

Ingredients
- 1 Beetroot - grated
- 1 Carrot - grated
- 1 Onion - finely chopped
- 1 green Chilli - chopped
- 1 Garlic clove - grated/chopped
- 1 teaspoon grated Ginger
- Salt
- 1 teaspoon Mustard seeds
- 2 tablespoon Sunflower/Olive/Coconut oil
Procedure
- In a pan, heat the oil and pop the mustard seeds.
- Add the grated/chopped ginger, garlic, chilli and onion and saute till the onions turns soft.
- Add the beetroot, carrot and salt, and some water. Bring the mixture to a boil.
- Simmer for a few more minutes till the vegetables look cooked and the mixture thickens.
